Start by slicing the pork neck into strips.
Sear the pork on olive oil for just a few minutes, season with salt and pepper, then remove from the pan and set it aside.
Into the same pan add chopped onions and saute for a couple of minutes. Add the meat back into the pan, together with drained mixed beans, tomato sauce, tomato paste, a good pinch of cayenne pepper and water, then simmer over medium heat for 10 minutes and stir in some chopped parsley.
