Polenta Oven Fries

 

Everyone loves to snack, am I right or am I right?

But everyone nowadays is on a diet, watching their figure and cutting processed foods out of their nutrition, so… Here’s a healthy option for your fries cravings.

And same as the regular fries, you can make a big batch and freeze them, then bake whenever you want them!

Bring vegetable stock to boil, then season with salt, pepper, smoked paprika, garlic and onion powder and add in 100 g of instant polenta.

Whisk vigorously to prevent lumps and cook for a couple of minutes until creamy.

Transfer the polenta while still hot into a lined casserole dish and let it completely cool down until it firms up.

Mix 20 g of polenta with grated pecorino cheese, then once polenta is firm, cut into fries and coat the fries with the mix for an extra crunch.

Spread them over a lined baking tin and bake in a preheated oven at 220°C/428°F with ventilator for 20-25 minutes until nice golden colour.

You can do the same with classic polenta, just cook it for longer, per packaging instructions.
