Pork and Beef Rice Goulash

One of my favourite traditional meals must be goulash, ad it can be made of different types of meat, cuts or even sides. But each and every holds a special place in my heart, and obviously, my tummy!

New and shiny things, as well as meals and dishes, will always be exciting, but think about that one thing that’s returning you to some nice memories, I promise you, it will be something old and used over a thousand times, again and again. And this is it.

Once you prep the meal, you can curl up to a nice book or a good show and just leave it to simmer in the background until the meats are nice and soft, ready to add in the rice.

On olive oil saute chopped onions and garlic with bay leaves for a few minutes, then add diced pork neck and beef chuck. Sear just for a couple of minutes, then season with salt and pepper.

Cover with vegetable stock and simmer for 2 hours on low heat.

Throw in raw rice and cook until rice is cooked. Add some hot water or more stock if needed.

Towards the end of the cooking, add a tablespoon of tomato paste and dill.
