Ajvar Croissants

 

Ajvar croissants are a unique and flavourful twist on the traditional pastry.

The soft, pillowy layers of the croissants provide the perfect vessel for the rich and savaury ajvar spread, adding a burst of Balkan flavours to each bite.

The sweet and tangy notes of roasted red peppers, eggplant and garlic in ajvar the delicate pastry create a deliciously balanced combination of the two.

Whether enjoyed as a delightful breakfast treat or a satisfying snack, ajvar croissants offer a delightful taste that is sure to satisfy everyone’s desires!

 

Combine warm water with yeast, sugar and a tablespoon of flour, then leave for 10 minutes to rise.

Add vegetable oil and Dida Boza mild ajvar, then give it a stir. Add the rest of the flour and a teaspoon and a half of salt and knead into a soft dough.

Cover with a kitchen towel and leave for 30 minutes in a warm place.

On a floured surface roll out the dough into 3 mm thickness and cut into triangles.

On the wider side of the triangles place a bit of butter, then roll into croissants. Spread the croissants over a lined baking sheet, leave for another 20 minutes in a warm place to rise, then brush with some milk and bake in a preheated oven at 200°C for 20 minutes.
