Blueberry Muffins
Blueberry muffins are a classic and beloved baked good enjoyed by many.
These soft muffins are studded with juicy blueberries that burst with sweetness in every bite. The moist crumb of the muffin provides the perfect canvas for the bright, tangy flavour of the blueberries to shine through. Whether enjoyed for breakfast on-the-go, as a midday snack, or as a comforting treat with a cup of tea, blueberry muffins never fail to satisfy.
Their simple yet delightful taste and fluffy texture make them a timeless favourite for all occasions.
Melt the butter, then leave it to cool down a minute.
Add eggs, yoghurt, granulated and brown sugar, vanilla extract and orange zest to the melted butter, and mix to combine.
Whisk together flour, a pinch of salt, baking powder and baking soda, then separate a tablespoon of the mix into a separate bowl and toss the blueberries with the mix to coat them.
Mix the dry ingredients with the wet ones, and finally fold in the blueberries. Divide the batter between 12 lined muffin moulds and bake for 10 minutes in a preheated oven at 200°C/392°F. Then rotate the muffin pan and bake for another 8-10 minutes to brown evenly.
Leave them to cool down at room temperature.
