Vietnamese Tuna and Sweetcorn Rice Wraps
Rice paper wraps are super thin wrappers traditionally made from rice, water and salt that can be filled with almost anything. Since they are so thin, the wrappers are almost translucent so you can see whatever is inside.
These kind of rolls are a delicious and nutritious option to enjoy as a snack or as a meal. The rolls are low in carbohydrate and fat and offer a moderate protein content. The vegetables make the rolls high in fibre and offer lots of good vitamins and minerals.
Replacing high-calorie refined flour with rice paper can help you enjoy the spring rolls without feeling guilty. Including rice paper rolls in your diet is a healthy choice, as the thin sheets won’t make you sleepy or feel heavy.
Dip the rice wrappers in lukewarm water for about 20 seconds each, just until they start to get a bit more flexible.
Place the wrappers on a plate, fill with drained tuna, sweetcorn and lettuce and roll tightly.
To make the rice wraps easier to wrap, I put the two wrappers together, one next to another overlapping, and filled them with stuffing.
I highly recommend pairing them with sweet and sour sauce as they go so well together!
