Spice Cake

The flavors of cinnamon and nutmeg take center stage, providing a harmonious balance of sweetness and subtle warmth, while cloves provide a hint of earthiness, making it the perfect cake for autumn weather!

 
 

With a mixer mix room temperature butter until creamy, then gradually add granulated and brown sugar and mix for 2 minutes. Add eggs and mix for another minute.

Combine flour, baking powder and baking soda, a pinch of salt, cinnamon, ground cloves and nutmeg, then add a third into the batter, together with 160 ml of milk and mix until just combined. Add another third of the dry ingredients, another 160 ml of milk and 15 ml of vinegar, then mix shortly. Add the rest of the dry ingredients and mix until incorporated.

Divide the batter between three lined baking moulds and bake in a preheated oven at 180°C/356°F for 30 minutes.

Leave them to cool down for 10 minutes, then take them out of the moulds and brush 30 ml of coffee over each sponge cake.

To prepare the cream frosting, mix room temperature butter using a hand mixer until creamy, then add vanilla extract and cream cheese and mix for a minute longer. Now gradually add icing sugar and mix until combined. Add milk at the end to reach the desired consistency.

Frost the cake and refrigerate it overnight.

To prepare the sponge cakes
