Red Velvet Cupcakes with Cheese Frosting
Why do we associate colour red with love, and moreover Valentine’s Day?
Firstly, red is associated with the heart, which is the centre of love and emotion. The heart is often depicted as a bright red symbol, and this association has helped make red a powerful symbol of love.
Another reason why red is the colour of love is because of its association with desire and passion. Red is a bold and confident colour that inspires feelings of excitement and energy. When we see red, it sparks a feeling of passion and urgency, which is why it is the perfect colour to express love on this day.
Red is also color of happiness and prosperity in China. Since Valentine’s Day is a special day to celebrate the love relationships and their journey, it is associated with Valentine ’s Day.
The red velvet cupcakes are the single-serving version of the delicious and spectacular red velvet cake, cute to bring to the table and very tasty!
Combine the flour with the black cocoa powder and baking powder.
Separately combine milk, vinegar and red food colouring gel.
Mix the room temperature butter with sugar for a couple of minutes, then add an egg and vanilla extract.
Add in half of the milk mix while mixing, then add the dry ingredients and a pinch of salt.
Mix until just combined, and add the rest of the milk mix.
Mix until incorporated, then divide the batter between muffin molds filling them up to half their. Bake in a preheated oven at 180°C/356°F for 20 minutes.
Whip the whipping cream until soft peaks, then add cream cheese, mascarpone cheese, icing sugar and vanilla extract and continue mixing until stiff peaks. Transfer the frosting into a piping bag.
With a bigger piping nozzle take out the centres. Fill the centres with the jam, then pipe out the frosting over the muffins.
