Beef and Barley Kale

 

Did you know that barley was one of the first cultivated grains, particularly in Eurasia as early as 10,000 years ago?

Barley is the oldest grain that people been known to cultivate - it has been known by Pre-Christian cultures as ‘The Holy Grain’. It was a staple in the diet of the ancient gladiators in Rome and its Legionnaires , and is referenced in the bible that ‘It was with five barley loaves and two fishes that our Lord fed the five thousand’.

It’s adaptable to a greater range of climate than any other cereal, with varieties suited to temperate, subarctic, or subtropical areas. Although it does best in growing seasons of at least 90 days, it is able to grow and ripen in a shorter time than any other cereal.

It is considered a good source of fibre, selenium, magnesium, niacin and vitamin B1, and in combination with kale, nutrition superstar due to the amounts of vitamins A, K, B6 and C, calcium, potassium, copper and manganese, this meal is just a superfood bomb!

And is great for the diet too! One cup of raw kale, or about 65 g, has just 33 calories and only 7 grams of carbohydrate. So, it’s a very diabetes-friendly/weight-friendly vegetable.

On some olive oil saute cubed beef and minced garlic for a few minutes, until brown. Then season with salt and pepper.


Pour in the beef stock, then let to boil.


Add barley and cook for 45 minutes.


Add in chopped kale and some tomato paste, then cook for a couple of more minutes and add seasoning if needed.

  1. On olive oil saute cubed beef and minced garlic for 5 minutes, then season with salt and pepper.
  2. Pour in the beef stock and water, then let to boil.
  3. Add barley and cook for 45 minutes.
  4. Add chopped kale and a tablespoon of tomato paste, then cook for 10 more minutes and season some more if needed.
