Potato Mackerel Salad
During summer months it’s crazy enough with all the heat, so most of the times I’m just trying to get quick fixes that taste delicious at the same time.
So with some boiled potatoes, fresh tomatoes and canned grilled mackerel you got yourself a whole dish!
Cook potatoes with skin in salted water, then peel and dice them.
Add canned grilled mackerel together with the oil they're in, add chopped onion and parsley, minced garlic and cherry tomatoes cut in halves.
Season with some pepper and lemon juice and refrigerate before serving.
