Potato Cream Cheese Cake

Boil the potatoes with their skin on, then peel and mash them with a potato masher.
Melt dark chocolate with butter, then combine with the mash potatoes.
Add crushed Pan di Stelle cookies, sugar, cocoa powder and rum, then mix with a spatula until combined. Press into a lined baking mould and refrigerate for 30 minutes.
With a hand mixer beat cream cheese with icing sugar until smooth. Add whipping cream and mix until stiff peaks, then spread the cream over the base.
Melt together dark chocolate and butter, then pour over the cake and refrigerate overnight.
