Potato Cream Cheese Cake

 

Potatoes are not just for savory dishes - they can also add a unique twist to a cake!

Incorporating potatoes into cake batter creates an amazing texture and moistness that is hard to resist. The mild flavor of potatoes allows other ingredients to shine, making them versatile in various cake recipes.

Add some good cookies into the mix - and Pan di Stelle cookies are just perfect for it! They are beloved Italian biscuits that are named "star bread", and are made of a rich, cocoa-infused dough balanced with a hint of hazelnut. The deep cocoa flavors of the cookies blend perfectly with the moist potato cake, creating a symphony of taste.

Finally, add a light cream made of cream cheese and whipped cream and chocolate ganache on the top, and an irresistible combination is ready to be savoured!

Boil the potatoes with their skin on, then peel and mash them with a potato masher.

Melt dark chocolate with butter, then combine with the mash potatoes.

Add crushed Pan di Stelle cookies, sugar, cocoa powder and rum, then mix with a spatula until combined. Press into a lined baking mould and refrigerate for 30 minutes.

With a hand mixer beat cream cheese with icing sugar until smooth. Add whipping cream and mix until stiff peaks, then spread the cream over the base.

Melt together dark chocolate and butter, then pour over the cake and refrigerate overnight.
