Pesto Salmon Pappardelle

These pesto salmon pappardelle are a fusion of flavours and textures, bringing together the earthy taste of spinach pappardelle, the rich and creamy notes of pesto, and the hearty, flaky goodness of salmon.

The base of the dish is spinach pappardelle, a wide, ribbon-like pasta that provides a beautiful backdrop for the other ingredients. Its green hue and slightly earthy taste add an extra layer of complexity to the dish, making it more than just your average pasta.

Canned salmon is a convenient and nutritious addition, offering a flavour that pairs wonderfully with the other components. The salmon’s natural richness is complemented by the creamy, herby notes of pesto, a sauce made from basil, garlic, pine nuts, parmesan cheese and olive oil. The pesto adds a burst of fresh, aromatic flavours that ties the entire dish together.

Garlic, minced and lightly sauteed in olive oil, provides a fragrant base that enhances the other ingredients without overpowering them. The olive oil not only helps to saute the garlic, but also adds a silky texture to the pasta, ensuring that every bite is luscious and well-coated.

This dish is incredibly easy to prepare, yet it delivers a complexity of flavours that belies its simplicity. The key is in the balance - the heartiness of the pasta, the freshness of the pesto, the rich flakiness of the salmon and the subtle undertones of garlic all come together to create a harmonious and satisfying meal.

If you’re looking for a quick weeknight dinner, pesto salmon pappardelle fits the bill. So, grab your ingredients and get ready to enjoy a plate of this quick pasta.
