Peanut Butter and Jelly Sandwich Cookies

 

Peanut butter and jam - these two ingredients work in perfect harmony, creating a delicious symphony of flavors. It wasn't until the early 1900s, however, that peanut butter and jelly were first paired together in a sandwich and their combination quickly became a hit among children and adults alike.

The affordable and delicious peanut butter jelly sandwich became a staple in American lunchboxes during the Great Depression and continued to be a popular choice throughout World War II, due to peanut butter's availability and long shelf life. Regardless, the history of the peanut butter jelly sandwich reminds us of the simple joy and comfort that can be found in this timeless classic.

So if I got the evolution right it’s: peanut butter, peanut butter and jelly, peanut butter and jelly sandwich, peanut butter and jelly sandwich cookies!

Mix room temperature butter and peanut butter with a mixer until creamy, then add one egg and mix for a couple of more seconds.

Add flour, brown sugar, baking powder, baking soda and a pinch of salt, then mix into a dough. Wrap the dough in plastic foil and put it in the refrigerator for an hour.

Take out the dough and leave it at room temperature for a few minutes, then roll it out thinly. Cut into shapes and spread the cookies over a lined baking sheet and bake in a preheated oven at 180°C/356°F for 10 minutes.

Allow the cookies to cool down.

Then spread a teaspoon of jam on one cookie and press it with another one and repeat for the rest of the cookies.

  3. Take out the dough and leave it at room temperature for 5 minutes, then roll it out thinly. Cut into shapes and spread the cookies over a lined baking sheet and bake in a preheated oven at 180°C for 10 minutes.
  4. Allow the cookies to cool down for 10 minutes.
  5. Then spread a teaspoon of jam on one cookie and press it with another one and repeat for the rest of the cookies.
