Drunk Squid with Potatoes

 

I was always such a big fan of squids in every way possible - grilled, fried, in pastas, risottos, salads, you name it!

In Croatia they not only inspired writers but chefs as well and they are such a tasty ingredient, and has been an essential part of the Mediterranean menu for centuries.

Squid contains a high number of vitamins and minerals, including Vitamin B-12, potassium, iron, phosphorus and copper. These essential nutrients aid in the performance and health of blood cells, bones and the immune system.

And did that squid is a healthier option than chicken? Yes, I said it. It is low in calories and fat and high in protein and vitamin B12, so it’s a complete protein that has all nine essential amino acids that our body cannot synthesize.

So let’s visit my home country Croatia for this beautiful recipe that will make you lick everything off the plate, and I mean that quite literally!

Start by cooking potatoes in salted water.

Clean the squid by removing the eyes, beak, ink sack and the bone, and separate the tentacles. Make two cuts so the squid doesn't huddle in the pan.

On olive oil saute minced garlic and chopped parsley for a minute, then add squid and the tentacles. Season with salt and pepper and cook on each side for a minute.

Pour in the wine and cook for 2 more minutes.

Add in the cooked potatoes and sizzle with lemon juice.

And now you’ve got yourself a real taste of the Mediterranean right there!

  4. Pour in 150 ml of red wine and cook for 2 more minutes.
  5. Add in the cooked potatoes and sizzle with lemon juice.
