Black Tuna Burgers

 

Black buns have gained popularity in recent years as a unique and visually striking addition to various culinary creations.

These buns are characterized by their dark, nearly black color, which can achieved by incorporating natural coloring agents into the dough, such as sepia ink or charcoal.

Black buns, tuna patties… All you have missing is a sauce that combines those two into an amazing burger, and that’s where the white sauce comes into play! Then add your choice of toppings and serve them with what other than chips!

 
 

Whisk together dry yeast, sugar and 25 ml of water, then leave for 10 minutes to rise.

Combine the flour, 225 ml of warm water, a teaspoon and a half of salt, yeast, one egg, melted butter and sepia ink. Then knead it into a soft dough.

Cover with a kitchen towel and leave in a warm place to rise for an hour.

Knead a couple of times again and roll it out to a thickness of 2 cm. Cut into circles and spread them over a lined baking sheet, cover with a kitchen towel and leave again to rise for another 30 minutes.

Brush the buns with milk and sprinkle with sesame seeds, then place them on the middle rack with a casserole of water on the bottom rack, and bake in a preheated oven at 200°C/392°F for 15 minutes.

Combine the drained tuna with breadcrumbs, one egg and mayonnaise, season with a pinch of salt and pepper, then divide into 4 parts and shape each one into a patty. Spread on a lined baking sheet and bake in a preheated oven at 200°C/392°F for 15 minutes.

For the sauce mix together mayonnaise, sour cream, dill, grated gherkin, minced garlic and a teaspoon of lemon juice until combined.

Spread the sauce over the buns, add the patties and other ingredients as desired into the burger such as cheese, lettuce, corn, onions and serve with chips.
