Black Pasta with Grilled Salmon

 

I’m always on the lookout for new and exciting flavor combinations to share with my foodies, and so I naturally had to try this Mediterranean dish!


For those unfamiliar, sepia ink is a black-tinged ink that is produced by cuttlefish. It has a unique flavor that is briny and slightly bitter, with a hint of sweetness. In traditional cuisine, sepia ink is often used in seafood dishes to add depth and color.


Of course, like any ingredient, sepia ink should be used in moderation. Its strong flavor can easily overwhelm a dish, so you need to be careful not to overdo it. But when used properly, sepia ink can add a new dimension to traditional cuisine.

Salmon with pasta is a delicious and nutritious meal that is perfect for any occasion. The combination of the tender salmon and the al dente pasta creates a satisfying texture that is complemented perfectly by deep umami flavour of the ink.

Additionally, salmon is an excellent source of protein, Omega-3 fatty acids, and other essential nutrients. Cook pasta in salted water and 10 g of black sepia ink until al-dente.

On 2 tablespoons of butter and chopped rosemary sear salmon fillets for 4 minutes on each side, then season with salt and pepper, remove from the pan and set them aside.

To the same pan add one more tablespoon of butter and a teaspoon of olive oil, then throw in anchovies, minced garlic and chopped parsley and fry for 5 minutes.

Mix milk, 10 g of black sepia ink and cornstarch, then stir it into the pan. Add in the pasta and cook for 2 minutes until the sauce thickens up. Season with pepper and salt as needed.

Serve with pan-seared salmons and freshly squeezed lemon juice.
