Sift together the flour, cocoa powders, pinch of salt and icing sugar.

Add diced cold butter and with your hands crumb and combine the mix.

Add the vanilla extract and a tablespoon water, so that the dough comes together.

Wrap the dough in plastic foil and refrigerate for 10-20 minutes, enough to make the dough firmer.

Roll the cookie dough on a lightly floured surface into 4 mm thickness, then cut out desired shapes and place them on the lined baking sheet.

Bake the cookies in a preheated oven at 180°C/356°F for 12 minutes, then let them cool down to room temperature and harden.
