Despite their tasty profile, comfort foods such as pancakes are often made with refined white flour and topped with butter and syrup, which is essentially pure sugar. This means that pancakes are high in calories, fat, and sugar, yet lacking in protein and fiber.
But who said pancakes always had to be unhealthy and reserved for ‘Pancake Tuesday’ or ‘Fat Day’?
You can enjoy these pancakes any day of the week without guilty conscience and no flour or sugar!
So kickstart your day with a stack of these healthy pancakes! This pancake recipe will make you feel full and ready to tackle your day.
Mix eggs, milk, baking powder and protein powder of your choice.
I used chocolate hazelnut powder for extra flavour. If you want some more great flavour, I recommend adding a teaspoon of coffee powder to the mix!
In a non-stick pan on a bit of coconut oil pour in some batter and cover with a lid.
Cook the pancakes for 2 minutes on one side, then flip and cook for a minute longer.
I topped the pancakes with some fruit protein yoghurt, strawberry syrup and roasted almonds. If you have some nice fresh fruits, they would be a great addition!
