Tiramisu in a Glass

Preparing tiramisu in a glass is so quick and simple. The process starts with preparing a cup of coffee, and then the rich egg and mascarpone cream with just a splash of rum. The ladyfingers, or savoiardi, are quickly dipped in cold espresso to soften them without making them soggy. Layers are then built in the glass, starting with a base of coffee-soaked ladyfingers, followed by the cream and cocoa powder sprinkle, and repeated until the glass is nearly full.

Prepare a strong coffee and set it aside to cool down completely.
Separate egg whites from the yolks.
With a mixer mix egg yolks with a tablespoon of sugar until light and fluffy for about 2 minutes, then gradually add mascarpone cheese and rum and mix until combined for another minute.
Add a pinch of salt and a tablespoon of sugar to the egg whites and with a mixer beat until stiff peaks. Now gently fold the egg whites into the yolks.
Break the lady fingers in halves and dip half of them in cold coffee and add them to the bottom of the serving glasses. Top with a generous layer of cream and dust with cocoa powder. Repeat the process with the coffee-dipped lady fingers over the cocoa layer and then cover with the rest of the cream.
At the end top with a layer of cocoa powder and place in the refrigerator for 15 minutes to chill.
