Squid Tentacles Tagliatelle

 

No such thing as too many strands! Combination of seafood and pasta is just magical, who could ever resist? And when I tell you it takes no more than 10 minutes to make, it’s a perfect meal for the busy week days!

Fascinating fact about these animals - did you know that squids came about in the Jurassic Era and have been here ever since, meaning that they technically evolved more than 100 million years ago?

This seafood has long been a staple food source in the Mediterranean diet, and finds it’s way on coastal tables at least once a week, served grilled, stuffed, or marinated in salads, pastas, and risottos. So here is one pasta recipe!

Cook pasta in salted water until al-dente and save some pasta water for the sauce.

On olive oil saute minced garlic for a minute, then add cherry tomatoes sliced in halves. Cook for about 2 minutes, then add in the squid tentacles, season with salt and pepper and cook for another 2 minutes.

Don’t cook the squid for longer than that as it becomes rubbery and chewy very quickly. If you do find that your squid has been overcooked, you will have to cook it for a long time to soften it.

Once the squid it done, stir in the pasta, pasta water, chopped parsley and lemon juice and simmer for up to a minute, just so the pasta combines with the rest.
