Pat the salmon fillets with towel paper and make a few sears on the skins. Season with salt and pepper.
Heat a pan over medium heat, and add oil. Add the salmons skin side down. Cook the salmon for 5 minutes, then carefully flip and cook on each side for another minute.
Combine sour cream, mustard, dill, minced garlic, lemon juice and milk into a sauce. Serve the sauce with the salmon.
