Rolled Ham and Sauerkraut

 

Incredibly healthy and full of essential nutrients like fiber, vitamins, and minerals, sauerkraut is one of the best ingredients you can add to your dishes, especially now at time of these colds and flus!

Most of our immune system is located in our gut, so it may come as no surprise that the gut-supporting properties of sauerkraut may also be of benefit. The good bacteria or probiotics, from sauerkraut, help to keep the lining of your digestive system healthy. A strong gut lining stops any unwanted substances or toxins from ‘leaking’ into your body and thereby causing an immune response. These same bacteria may also support your natural antibodies and reduce your risk of infections.

As well as being a source of probiotics, sauerkraut also provides vitamin C and iron, nutrients known to support a stronger immune response.

Cook potatoes in salted water. Do it separately from the sauerkraut because if you do it together you may have a hard time getting the potatoes fully cooked because of the acidity of sauerkraut.

In a separate pot fry sliced bacon until it releases fat, about a minute, then add chopped sauerkraut, minced garlic and bay leaves. Cook with stirring for a couple of minutes. If needed add a splash of water.

Season with salt and pepper, add chopped rolled ham and cover with beef stock.

Cook for 10 minutes, then stir in a teaspoon of tomato paste and potatoes and cook for a few more minutes.
