Beat room temperature butter and sugars together until light and fluffy for a few minutes.
Mix in the egg, vanilla extract, red food coloring and half a teaspoon of white vinegar until well combined.
Separately whisk together the flour, cocoa powder, baking soda, baking powder and a pinch of salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
Stir in the white chocolate chunks until incorporated.
Place the dough into the fridge for half an hour, then scoop the dough into balls and place them on a lined baking sheet.
Bake the cookies for 14 minutes in a preheated oven at 175°C/347°F. If they have spread out more than you’d like, take a glass and with the rim shape them as desired while still hot. Then Allow the cookies to cool down to room temperature to set.
