Pumpkin Soup

First things first, let’s make a soup!
Pumpkin soup is a quintessential fall comfort food that warms the soul with every spoonful. Made from the flesh of pumpkins, this velvety soup is an embodiment of autumn's earthy flavors. The rich and creamy texture of the soup is then complemented by a delicate blend of aromatic herbs.

On olive oil saute chopped onions and minced garlic for a few minutes, then add diced pumpkin. Season with salt and pepper, sage, thyme and rosemary, then cook on medium heat for 10 minutes while stirring occasionally, adding a splash of water as needed.
Cover with vegetable stock, let it boil and simmer for 20 more minutes, then blend into a smooth soup.
Garnish with a splash of cooking cream, croutons, soup pearls or seeds as desired.
