Pork Fried Rice

 

I love fried rice for two reasons. One, it’s simply delicious. Two, you can add whatever you have in your fridge to make it work!

And let me tell you about this version.

Pork fried rice is a popular Asian dish that combines savoury flavours and varied textures. Typically made with cooked rice, stir-fried pork, vegetables like peas and pepper, and seasoned with soy sauce and other spices, it's a satisfying one-dish meal.

The pork adds richness, while the vegetables provide a colorful and crunchy contrast.

It's going to remind you of your favourite takeaway, as this pork fried rice is a flavorful and comforting choice for those busy days since it’s so quick to make, especially if you have rice leftovers from the day before.

Cook rice in salted water, then leave it to cool down and flake it with a fork.

Combine mixed minced meat with 2 tablespoons of light soy sauce.

In a wok on a tablespoon of vegetable oil scramble eggs until almost cooked, then take them out, and add in another tablespoon of oil.

Turn the heat to high and cook thinly sliced pork for a minute. Season with pepper, lemongrass and ginger, add minced garlic, diced green peppers and peas and fry for a minute.

Throw in the rice, bean sprouts, scrambled eggs, sesame oil, a tablespoons of light soy sauce, dark soy sauce and oyster sauce and fry over high heat for 2 minutes while stirring with a spatula.
