No Bake Chocolate Oreo Mousse Cake

Heat up 250 ml of whipping cream and stir in the chocolate, a pinch of salt and vanilla extract until it's melted and leave it to cool down to room temperature.

Ground Oreos and roasted almonds in a food processor, then combine well with melted butter and milk, and press into a lined baking mould. After, place in the refrigerator for a few minutes.

Whisk 450 ml of the whipping cream to stiff peaks with a mixer. Add the chocolate ganache and gently fold to combine. 

Spread the mousse over the base and return it to the fridge.

Mix the whipping cream, whipping cream stabiliser and icing sugar until stiff peaks, then spread it over the chocolate mousse and refrigerate for at least 3 hours to set.
