Monster Cookies

 

Monster cookies are a treat packed with a mix of vibrant flavours and textures, making them perfect for any occasion. These cookies combine the natural sweetness of blueberries with the rich decadence of Oreos, digestive biscuits and dark chocolate chunks.

The dough is made with a base of buttery, sugar-sweetened batter, which is infused with a vivid magenta hue from mashed blueberries. This colourful mixture is then enhanced with crushed biscuits and chocolate, creating an irresistible blend of crunchy and gooey goodness in every bite.

Once chilled, the cookies are shaped into rounds and decorated with additional biscuit pieces and chocolate chunks for a visually stunning finish.

Baked to perfection in just 13 minutes, they emerge soft yet sturdy, hardening as they cool to achieve the perfect texture.

These cookies are a wonderful combination of fruitiness and indulgence, making them a unique addition to any biscuit tin or dessert spread.

Heat up blueberries in a microwave in for 2 minutes, stirring every half a minute, until the blueberries are mushy.

Either frozen or fresh can be used. With fresh blueberries you will get more of a purple collur, while when using frozen it will end up more blue.

With a mixer beat room temperature butter with sugar until soft and creamy, for about 2-3 minutes.

Mix cornstarch with water until fully combined. Then with the mixer on low speed, add in the cornstarch mixture and vanilla extract.

Add in the blueberries and mix until it has a deep magenta color.

Whisk together flour, baking powder and a pinch of salt, then add it into the wet ingredients in two batches, and continue mixing until just combined.

Roughly break 70 g of Oreo cookies and Digestive biscuits, then together with 70 g of chocolate chunks fold into the batter.

With a small scoop divide the batter into balls onto a lined baking tray and press each ball lightly with your palm into a cookie.

Again roughly break 30 g of Oreo cookies and Digestive biscuits, then press them into each cookie, together with the rest of the chocolate chunks.

Pop the cookies into the refrigerator for 30 minutes to chill.

Bake the cookies in a preheated oven at 180°C/356°F for 13 minutes. Don't bake them for longer as they will harden as they cool down.
