Meatballs and Bulgur Balls with Spinach

Bulgur is a highly nutritious whole grain originating in the Mediterranean. It’s more nutritious than most of other refined wheat products as it is less processed.

This healthy cereal meal occupies the top position in several traditional Middle Eastern dishes. Because bulgur has been precooked and dried, it is very easy to prepare as it does not require cooking, soaking in hot water or stock is just fine!

Bulgur is not only tasty and quick to prepare, but it’s also very nutritious. It’s considered a whole grain, meaning you receive all the nutrients the plant has to offer. Eating fiber-rich foods, like whole grains, fruits, and vegetables, promotes heart health, contributes to a lower risk of stroke, heart disease, and heart failure, among other chronic diseases. Compared with refined grains, whole grains are associated with a reduced blood sugar response and lower insulin levels. Regular intake of bulgur can promote the growth of healthy gut bacteria and may also be effective for treating and preventing digestive issues, weight loss and a reduced tendency toward weight gain.

So here is a hearty meal that in combination with meatballs is not only tasty, but also healthy and full of good nutrients!

First mix the bulgur with 100ml of boiling stock and leave for 10 minutes to rest.

Crumble the bulgur with a fork, add one egg, flour, smoked paprika, season with salt and pepper and mix well. In case the mix is too sticky, just add a bit more flour. Make balls out of the mix and leave in the fridge to set while making meatballs.

Season minced meat with salt, pepper and garlic powder, and shape into meatballs.

On olive oil fry the meatballs for a few minutes, and add the bulgur balls in. Cover with the rest of vegetable stock and bring to a boil with stirring so the bulgur balls don't stick to one another.

Lower the heat and add tomato paste, spinach and sliced cherry tomatoes and cook for a few more minutes until cooked.
