With a mixer mix the butter on medium high for two minutes. Then add in the sugars and mix until light and fluffy. Add in eggs one by one while mixing on low speed now, then add vanilla extract and honey, and mix until combined.

Combine flour, baking powder, baking soda, a pinch of salt, ginger, cinnamon, nutmeg and ground cloves, then add half of the dry ingredients into the batter together with half of the milk. Mix until combined, then add the rest of the dry ingredients, milk and a tablespoon of vinegar and mix until just combined.

Divide the batter between 3 lined baking moulds and bake in a preheated oven at 180°C/356°F for 35 minutes, then allow to completely cool down.

Mix whipping cream and whipping cream stabilizer until soft peaks, then add instant coffee and vanilla extract, and continue mixing until stiff peaks.

Stack the cake with layers of sponge cakes and cream, then frost with the rest of the cream. Refrigerate the cake overnight.
