Custard Mix Cookies
Are you still making up your mind what cookies you’re going to make for Easter? If you’ve got kids, these will be just the cookies for you.
For these you will need custard mixes!
Custard mixes are made out of cornstarch, which binds with the liquids in the dough together, so this will stop the cookies from spreading. It will also help them be soft, tender and light.
And not to mention addictive!
For the light cookie dough with your hands press the icing sugar, flour and vanilla custard mix into room temperature butter and knead until combined.
For the dark cookie dough with your hands press the icing sugar, flour, cocoa powder and chocolate custard mix into room temperature butter and knead until combined.
Wrap both doughs into plastic foil and refrigerate for 30 minutes.
On a floured surface roll out both doughs and cut it out in two sizes with linzer cookie cutters. With the rest of the dough make little ears and legs.
Glue the parts together with an egg white, then arrange the cookies on a lined baking sheet and bake in a preheated oven at 180°C/356°F for 10 minutes.
Let them cool down, then glue the eyes on them with some melted chocolate or royal icing.
