Biscoff Cookies
Biscoff cookies are a delightful treat, perfect for the festive season. These biscuits combine the rich, caramelized flavour of Biscoff spread with a buttery, melt-in-the-mouth cookie base. To make these biscuits, you mix the dry ingredients with cold diced butter, egg yolks, and a pinch of salt, then knead the dough by hand until it forms a smooth consistency. The dough is shaped into balls, which are gently pressed onto a baking tray and given a distinctive indentation in the centre, where a spoonful of Biscoff spread is later added after baking. The cookies are then baked until golden and crisp, with a deliciously indulgent topping of Biscoff spread and ground Biscoff biscuits.

Combine the dry ingredients with diced cold butter, egg yolks and a pinch of salt, then with your hands knead until combined, for about 3 minutes.
Shape into balls, should make 16 of them, then press them slightly onto a lined baking tray and with a wooden spoon make holes in the middle.
Bake in a preheated oven at 180°C/356°F for 13 minutes.
Leave them to cool down to room temperature, then add a teaspoon of Biscoff spread per cookie and sprinkle some ground Biscoff biscuits over them.
