Place the cod fillets, egg, 40 g of panko breadcrumbs, parsley and a good pinch of salt and pepper in a food processor and blend until blended and combined. Place them into the refrigerator for an hour.
Shape into balls and roll them into the rest of the breadcrumbs.
Spread the cod bites over a lined baking tray and spray or sizzle them with olive oil. Bake in a preheated oven at 200°C/392°F for 25 minutes, or until golden brown.
