Baileys Cupcakes
Green and boozy are the two adjectives of today, St Patrick’s Day, and one cannot go without the other!
St. Patrick's Day, or Paddy's Day as it's fondly called, is a global celebration of Irish culture, marked every year on March 17th. It honours St. Patrick, the patron saint of Ireland, who is credited with bringing Christianity to the Irish people in the 5th century. Legend has it that he used the three-leafed shamrock to explain the concept of the Holy Trinity, which is why the shamrock is such a significant symbol of the day.
Traditionally, St. Patrick's Day was a solemn religious occasion in Ireland, but over the years, it has evolved into a lively festival celebrated worldwide. Parades, music, dancing and everything green - commonly associated with Ireland - are hallmarks of modern festivities. In cities like Dublin, New York and Chicago, spectacular parades draw huge crowds, while in places like Chicago, they even dye their river green!
Beyond the revelry, Paddy's Day is a moment of pride for the Irish diaspora, a time to embrace Irish traditions, enjoy hearty Irish food (like corned beef and cabbage) and raise a glass of Guinness, whiskey or Baileys. It's about celebrating the warmth, humour and resilience of the Irish spirit.




Whisk together the flour, cocoa powder, cornstarch, baking powder and a pinch of salt.
Separately mix eggs with sugar, oil, warm coffee and Baileys until combined, then add in the dry ingredients and continue mixing until incorporated.
Divide the batter between 12 muffin moulds, and bake in a preheated oven at 180°C/356°F for 20 minutes.
Prepare the frosting by beating the cream cheese until smooth, then add whipping cream, whipping cream stabilizer and icing sugar, then mix until soft peaks. Add a shot of Baileys and green colouring and continue mixing until stiff peaks.
Transfer the frosting into a piping bag and pipe out the frosting onto room temperature muffins.
